Baked Chicken a la Pobre Recipe

Ingredients

  • 3 tbsps soy sauce
  • 1 tbsp Worcestershire sauce
  • 1 tbsp
  • 1 kg boneless, chicken thighs
  • Black pepper to taste
  • 5 cloves of garlic, plus 1 head chopped finely

Steps

  1. Mix soy sauce, Worcestershire sauce, and kecap manis in a bowl. If there is no kecap manis, you can substitute a mixture of brown or white sugar with soy sauce.
  2. Arrange chicken in 1 layer in a baking dish. Pour sauce over. Season with pepper. Turn chicken to coat completely. Add smashed garlic around the dish. Marinate for 15 to 20 minutes. Preheat oven to 375°F.
  3. When ready, turn chicken skin side up. Bake in the oven until cooked through, about 40 to 45 minutes
  4. Meanwhile, heat oil in a wok or pan over medium-high heat. Fry chopped garlic until golden and toasted. Drain on paper towels and set aside.
  5. Sprinkle fried garlic over baked chicken. Serve with fried rice on the side.
