Sea Bream with ginger

Ingredients

  • 2 tbsp vegetable oil
  • 5 shallot peeled and thinly sliced
  • 3 fresh ginger root peeled and cut into thin strips
  • 5 dried chilli peppers deseeded and thinly sliced
  • 1 ikan bilis or chicken stock
  • 1 tsp sesame seed oil
  • 2 tbsp oyster sauce
  • 500 g sea bream
  • 2 stalk coriander leaf
  • 2 spring onion trimmed and shredded

Steps

  1. Heat the water in the steamer. In a small frying pan heat the vegetable oil.
  2. Add the sliced shallots, ginger and chili pepper. Stir fry for 2-3 minutes.
  3. Add the Ikan Bilis stock, sesame oil and oyster sauce and fry for a 1 minute.
  4. Place the fish portions on a heatproof dish. Cover the fish with shallot, ginger mixture.
  5. Place in the steamer and cook for 10-15 minutes.
  6. Place the fish portions on a serving dish.
  7. Spoon over the liquid from the cooking plate.
  8. Garnish with coriander leaves, lemon slices and the shredded spring onion.
  9. Serve hot.
