Ingredients
- 2 tbsp vegetable oil
- 5 shallot peeled and thinly sliced
- 3 fresh ginger root peeled and cut into thin strips
- 5 dried chilli peppers deseeded and thinly sliced
- 1 ikan bilis or chicken stock
- 1 tsp sesame seed oil
- 2 tbsp oyster sauce
- 500 g sea bream
- 2 stalk coriander leaf
- 2 spring onion trimmed and shredded
Steps
- Heat the water in the steamer. In a small frying pan heat the vegetable oil.
- Add the sliced shallots, ginger and chili pepper. Stir fry for 2-3 minutes.
- Add the Ikan Bilis stock, sesame oil and oyster sauce and fry for a 1 minute.
- Place the fish portions on a heatproof dish. Cover the fish with shallot, ginger mixture.
- Place in the steamer and cook for 10-15 minutes.
- Place the fish portions on a serving dish.
- Spoon over the liquid from the cooking plate.
- Garnish with coriander leaves, lemon slices and the shredded spring onion.
- Serve hot.
