Stuffed Egg Rolls

  • 3 medium eggs , beaten
  • Milk
  • 100 g minced meat
  • Finely chopped onion
  • Diced carrot , boiled
  • Sweetcorn kernels
  • Peas , boiled briefly
  • 1/2 tsp mild curry powder
  • Salt and pepper to taste
  • 1 tsp cornflour , dissolved in water or stock
  • Unsaturated oil


  1. Heat 3/4 of the oil and fry the onion
  2. Add in the curry powder, then the minced meat and the vegetables
  3. Saute, mixing well, while pouring the cornflour mixture, add in salt and pepper and cook until almost dry
  4. Remove the ingredients and set aside
  5. Make egg pancakes by coating the pan with the remaining oil and pouring in a small laddleful of beaten egg to make a thin 10-12 cm round
  6. Cook on both sides until slightly browned
  7. Remove and fill each pancake with some of the mixed stuffing, roll and serve
